The epazote is a large annual plant with irregularly developing branches and red stems that reach a height of about 4 feet. It looks like a weed. The leaves are green and serrated. The plant produces small greenish-yellow flowers along the stem. The flavor is strong and characteristic comparable to the combination of coriander, anise, pine, camphor and eucalyptus. Epazote is one of the most used herbs in Mexican cuisine. It is used in tamales, sauces, black beans, enchiladas, and mole.
